Hyssop (Hyssopus officinalis)


Semi-evergreen, sub-shrub with narrow leaves and dark blue, two-lipped flowers. Leaves have a bitter, sage-mint flavour.  Good companion plant as it helps deter flea beetles and insect larvae.

Cultivation:  Grow in well-drained soil in full sun. Cut back hard in spring

Height:   45-60cm x 60-90cm

Culinary Uses:  Use sparingly in soups, salads, pulse and meat dishes. Flowers are edible and can be used in salads. The dried herb is used to make herb tea

Caution:  Very strong herb, use sparingly
